The weather today was, as my brother said, f***in’ caca. So, I was in serious need of some comfort food after work. And what says comfort more than the staff of life? Especially when matched with cheese and wine.

I went a little crazy and made my grilled cheese sandwich a triple decker. Poor planning on my part. Of course the middle slice of bread gets no toasty action at all, so it doesn’t really work the way I’d envisioned it in my head.

Still, it was crunchy, gooey, cheesy goodness that made me feel better. And that’s all that counts.

    Triple-Decker Tips: Either pre-toast the middle slice, or do a single sandwich first and then add second side of cheese and third piece of bread towards the end.

      Yeah, thought of that after. 🙂 That’s what happens when you try to be creative on an empty stomach.
