As I mentioned last week, Mabel’s on Roncy prematurely pulled the bread pudding from their menu, claiming it was more of a cold weather item. Well, well, well Mabel. What do you call this? Hmmm?!

Since I was in serious need of comfort food, I decided to take matters into my own hands. Yes, I made a bread pudding. No, there was no rum sauce, but dammit, there was Bailey’s in the batter. I got the recipe from Recipezaar, with a few necessary tweaks. I only had turbinado sugar and organic sugar (well, it’s off white). Also, there was only β…” cups of Bailey’s left in the bottle, so I made up the difference with milk.

Next time I do this, I’ll definitely make sure I have the full cup of Bailey’s. I think the flavour was a little on the subtle side and that extra β…“ cup would have made a difference. Also, I’d mix together the bread and egg mixture instead of just pouring it over the top. The top pieces of bread didn’t get quite enough and ended up pretty dry.

Still, to my mind, there’s no such thing as a bad bread pudding. πŸ™‚
